Fidencio Madrecuixe Joven Mezcal 750 ML

Fidencio Madrecuixe is an unaged Oaxacan mezcal made from madrecuixe, a long, narrow agave in the karwinskii family that grows above ground on a woody trunk rather than in a rosette at soil level. Fidencio works in Santiago Matatlan in the traditional way: pit roasting over hot stones, milling, open fermentation and copper pot distillation. The karwinskii agaves are the savoury, mineral corner of mezcal, and this one shows it — wet earth, green herbs and light smoke on the nose, a palate that runs vegetal and briny with a citrus lift, and a dry, long finish. Drink it neat in a small clay copita, without ice.
