Penelope's Cooper Series is where the brand plays with finishing casks, and this batch one release takes straight rye whiskey and moves it into Tokaji casks from Hungary. Tokaji is a sweet wine, and that residual sweetness is exactly the counterweight rye wants: the grain's pepper stays where it is, but it gets wrapped in something richer. The nose is honeyed apricot and dill, the palate runs marmalade, baking spice and dried fig over the rye backbone, and the finish is warm, sweet and long. Drink it neat to read the finish properly, or stir it into a Manhattan and let the vermouth get out of the way.
