Guerra Seca Sotol (Batch GS002) is a spirit distilled from wild-harvested sotol plants — Dasylirion, sometimes called desert spoon — gathered in the Chihuahuan Desert of northern Mexico, not agave, which is what mezcal and tequila are made from. Sotol has its own denomination of origin covering Chihuahua, Coahuila, and Durango, and is often considered northern Mexico's answer to mezcal, with a more mineral, herbal, desert character than agave spirits typically show. This batch is double distilled and given a short rest in American oak barrels. Expect an earthy, savory spirit distinct from both tequila and mezcal.
