Hillrock Double Cask Rye Whiskey, from Hillrock Estate Distillery in Ancram, New York, blends two rye whiskeys matured differently: one aged two years in new, charred American oak, the other aged four years in used bourbon barrels. Combining fresh-oak intensity with the mellower character of once-used barrels gives the blend both spice and roundness — caramel, vanilla, and oak layered with a peppery rye backbone. Hillrock grows some of its own grain on its Hudson Valley estate, one of the few American whiskey producers to do so. Bottled at 90 proof, it's built for neat sipping or a classic rye cocktail.
