Holmes Cay Single Cask Guyana 2005 is a single-cask Demerara rum, distilled from a blend of pot and column still spirit in Guyana in 2005 and aged 15 years in ex-bourbon barrels before an independent Holmes Cay bottling. Expect a deep golden color, a nose of dried fruit and toffee, and a palate that turns smooth and creamy with caramel, vanilla and baking spice, finishing long with a trace of smoke typical of Demerara pot-still rum. It rewards patient sipping but has enough backbone to hold up in a well-built rum cocktail too.

How to drink Holmes Cay Guyana 2005

Its pot-still backbone makes a strong Rum Old Fashioned, where the toffee and spice carry through the sugar and bitters. Neat sipping in a tulip glass is the better call if you want to taste the full 15 years of oak first.
