Kaiyo The Single is a 7-year-old Japanese whisky finished in mizunara oak, the rare, porous Japanese oak species prized for imparting sandalwood, coconut and incense-like notes that neither American nor European oak produce. Kaiyo sources and finishes whisky rather than distilling from scratch, and part of its story involves resting casks at sea to accelerate maturation through motion and temperature change. Expect vanilla and sandalwood on the nose, a palate of coconut, spice and light fruit, and a smooth, aromatic finish distinct from a typical Scotch or bourbon-style whisky.
