Koloa Single Barrel Kaua'i Reserve at five years is the older of the distillery's single cask rums, made from Hawaiian sugar cane and distilled in a copper pot still on Kauai. The extra year in wood pulls it further from the tropical, fruit-driven style toward something drier and more whiskey-adjacent. The nose gives dark toffee, dried pineapple and a hint of coconut husk; the palate is molasses and vanilla against oak tannin and clove; and the finish is long, dry and gently spiced. Because it comes from a single cask, no two bottlings match exactly. Serve it neat, or over one large cube.
