Le Portier Shay is a VSOP cognac, the brand founded by Shannon Sharpe, here in a half bottle. VSOP is a legal grade rather than a marketing term: to carry it, the youngest eau-de-vie in the blend must have spent at least four years in French oak, which is where the dried fruit and vanilla come from. The nose leans on dried apricot, vanilla and candied orange; the palate is round and fruity with baked pear, caramel and light oak spice; the finish is warm and smooth without much bite. Drink it neat in a tulip glass, over a large cube, or in a sidecar where the fruit can carry the drink.
