APHRO Nubi from Mansa Spirits is made from palm sap. The tree is tapped, the sap ferments quickly in the heat, and the resulting palm wine is distilled. That West African tradition is older than most of what sits on a back bar, and this spirit keeps its wild edge rather than being polished flat. The nose is floral and tropical, mango skin and orange blossom with a bready ferment note underneath. The palate is dry and grassy with green fruit and a saline snap, and the finish is clean with a hint of pepper. Serve it chilled and neat in a small glass, or build a sour with lime and honey.
