Noilly Prat Extra Dry is a classic French dry vermouth from the house founded in 1813 in Marseillan, made from a blend of wines, spices, and herbs and aged 10-12 months in oak barrels, part of which rests outdoors exposed to the sea air — a maturation method unique to the brand. That outdoor aging is credited with giving Noilly Prat its distinctive salinity and complexity compared to other dry vermouths. Expect a pale color and a delicate, aromatic flavor with bright notes of apple, lemon, orange, thyme, and a hint of cinnamon. It's the standard reference vermouth for a classic dry Martini.
