Novo Fogo Silver Cachaca is an unaged cachaca from the Brazilian producer Novo Fogo, based in Paraty, distilled from fresh-pressed sugarcane juice rather than molasses, the defining trait of cachaca as distinct from most rum. As a silver (unaged) style, it's bottled shortly after distillation to preserve the grassy, fruity character of the fresh sugarcane. Expect vegetal sugarcane and tropical fruit on the nose, a bright, clean palate, and a crisp finish. The standard entry point into Novo Fogo's organic cachaca line.
