The Cabinet is an American whiskey from Proof and Wood, the independent bottling house founded by Dave Schmier that buys mature barrels from other distilleries and blends them under its own labels rather than running a still of its own. That approach means the whiskey in the bottle is chosen for what it already tastes like, not for what a house recipe demands. The nose leads with vanilla, dried orchard fruit and toasted oak, the palate turns to caramel and baking spice with a dry cereal note through the middle, and the finish is oak-dry and faintly nutty. Neat first, then a few drops of water.
