Rather than the usual few months, it is rested for years in the distillery's old American oak pipon tanks in the lowland town of Tequila, building a depth most reposados never reach. The spirit stays 100% additive-free at 80 proof, so the complexity comes from time and wood alone: cinnamon, baked apple, and caramel on the nose, then agave, piloncillo, candied ginger, and Meyer lemon over very light oak, closing slow and warm.
