Patrón Añejo Barrel Select is a single-barrel bottling of Patrón's añejo, chosen cask by cask at Hacienda Patrón in the highlands of Jalisco. Patrón cooks its agave in small brick ovens and crushes it with both a tahona wheel and a roller mill, then ages the añejo in oak before blending, except here, where one barrel goes into the bottle on its own. The nose is cooked agave, vanilla and dried apricot; the palate is soft and oaky, with caramel, honey and a little baking spice; the finish is warm, sweet and clean. Drink it neat in a copita after dinner, and leave the lime alone.
