The Perfect Fifth Glenrothes 36 Year is an independent bottling of Speyside malt from Glenrothes, a Rothes distillery whose spirit has long been more prized by blenders and bottlers than by its own marketing. Thirty-six years in cask take an already rich, fruit-driven make somewhere deeper and waxier. The nose is dried apricot, beeswax and orange marmalade; the palate is thick, with baked apple, honeycomb, ginger and old oak polish; the finish is long, drying and faintly resinous. This is a sit-down whisky and a small pour rather than a Friday bottle. Serve it neat in a copita and leave the ice for something younger.
