The Scarlet Ibis Trinidad Rum 750ml

The Scarlet Ibis is a Trinidad rum blended from stocks distilled on the island and built for bartenders rather than armchairs: it was created for a New York cocktail bar that wanted a rum with enough backbone to survive tiki proportions of lime, sugar and crushed ice. It takes its name from Trinidad's national bird. The nose is molasses, banana and a lick of char; the palate is dry and firm, with brown sugar, baking spice, dried orange and a faint funk underneath; the finish is warm and clean. Built for a Mai Tai, a rum old fashioned or a Queen's Park Swizzle, though it holds up neat.
