Txomin Etxaniz Blanco Basque Country 750ml

Txomin Etxaniz is the benchmark producer of Getariako Txakolina, the Basque white made on steep vineyards that run down toward the Bay of Biscay a few miles west of San Sebastian. The grape is Hondarrabi Zuri, picked early and fermented cold, and the wine keeps a faint natural spritz from that process, which is why it is traditionally poured from a height into a wide glass to knock the bubbles out. Green apple, lemon and sea spray on the nose, a sharp saline palate with lime and unripe pear, and a short, bracing, bone dry finish. Serve it very cold with anchovies, grilled sardines or anything fried.
