Vivo Clandestino is a joven mezcal — unaged, bottled clear, and made the traditional way with agave roasted in an earthen pit before fermentation and distillation. That pit roast is what separates mezcal from tequila, and it leaves smoke woven into the spirit rather than layered on top of it. Expect wood smoke and green herbs on the nose, then a palate of roasted agave, citrus pith and damp earth, with a mineral, faintly smoky finish. The one-litre bottle makes it a practical pour for a bar cart that actually gets used. Sip it neat at room temperature, or trade it into a mezcal negroni.
