The Danville, Kentucky distillery is known for two things: a sweet mash fermentation that starts clean every time, and a low barrel entry proof, both of which push the whiskey toward fruit and away from raw heat. This one shows baked apple and vanilla bean up front, then caramel, cocoa and cinnamon across a full palate, with a dry oak-and-grain finish that lingers. Serve it neat in a small pour, with water on the side to open it up.
