Wilderness Trail Single Barrel Rye comes from the Danville, Kentucky distillery founded by two fermentation scientists, who run a sweet mash process and a low barrel-entry proof. Both are unusual choices, and both are aimed at getting more out of the fermentation and less out of the wood. This bottling is drawn from a single cask rather than blended to a house profile. The nose is mint, cracked pepper and vanilla; the palate is oily and full, with rye spice, caramel and dark cherry; the finish is long and dry with clove and oak. Neat is the place to start. It also makes a Manhattan with real grip.
