Yellow Spot 12 Year is a single pot still Irish whiskey matured across three cask types — American bourbon barrels, Spanish Oloroso sherry butts, and rare Spanish Malaga casks that lend the range its signature stone-fruit sweetness. Part of the historic Spot lineup once bonded by Dublin merchants Mitchell & Son and now distilled at Midleton, it is built on the pot still mash of malted and unmalted barley that gives Irish whiskey of this style its creamy, spiced weight. The nose carries mown hay, cracked black pepper, and honeyed peach; the palate turns to fresh coffee, milk chocolate, and crème brûlée before a long, grape-sweet close. Bottled at 92 proof, it rewards a neat pour and a little patience in the glass.
