Yellowstone Special Finishes Collection Rum Cask is a Kentucky bourbon from Limestone Branch Distillery given a second stay in barrels that previously held rum. Finishing bourbon in rum wood works as a sweetener rather than a disguise: the whiskey keeps its corn and oak backbone while picking up a tropical, molasses-tinged layer on top. The nose brings banana, brown sugar and toasted coconut over caramel; the palate is round and sweet, with baked pineapple, vanilla and a little baking spice; the finish is warm and gently syrupy. Neat is the way to read the finish clearly, though it also makes an unusually good tiki-leaning old fashioned.
