Yola Pechuga is a small-batch mezcal from San Juan del Río, Oaxaca, made at the women-run Yola Distillery using agave from a family farm established in 1971. Pechuga mezcal takes a base spirit through a rare third distillation, this time with a turkey breast suspended above the still alongside orange, tangerine, guayaba, and other seasonal fruit, so both fat and fruit leave their mark on the final spirit. Bottled at 45% ABV, it comes out savory and layered, smoke and roasted agave up front, then a wave of tropical fruit and a faint meaty richness on the finish. It's a sipping mezcal for someone who already knows they like mezcal and wants to taste what the pechuga process actually does.
