Cabal Charro Blanco El Crucero II is an unaged blue agave tequila bottled at 700ml, part of a small limited series from the Cabal range. Blanco tequila skips the barrel entirely, which means everything in the glass traces back to the agave and the still: how the piñas were cooked, how the juice fermented, where the distiller made the cuts. Here that reads as cooked agave, lime zest and a floral lift on the nose, sweet agave with citrus, white pepper and a green herbal streak on the palate, and a crisp peppery finish. Serve it neat at room temperature in a copita, or shaken into a margarita with fresh lime.
