WhistlePig Declaration is a wheat whiskey released for America's 250th birthday — the Vermont house that led the rye revolution planting its flag in the next great American grain. Built on a high-wheat mash bill of 100% American grain, aged in double American oak, then run through a second finish in wave-stave barrels that adds a toasted gradient most wheat whiskeys never see. It pours soft and summery at 86 proof: vanilla and orange crème on the nose, sweet cinnamon bread and candied citrus through the palate, charred oak easing out the finish. The commemorative decanter with its anniversary seal makes it a keeper; the whiskey makes it a drinker. Serve it neat, over a big rock, or in a wheat-whiskey sour.
