George Remus Single Barrel is a straight bourbon from Ross & Squibb in Lawrenceburg, Indiana, the distillery behind a great deal of American high-rye whiskey, and this Volstead First Edition comes from one cask rather than a batch. Rye in the mash is what defines the house style: it cuts the corn sweetness with pepper and mint instead of letting it run soft and round. The nose is caramel, orange peel and dry spice; the palate brings vanilla, cherry and a clear rye bite; the finish is long, peppery and dry. Try it neat first, then build a Manhattan with it. The rye backbone holds up to vermouth.
