That extended aging transforms the wine: what starts as a precise, mineral champagne develops into something richer and more complex, with notes of brioche, dried fruit, and honeyed richness layered over the original citrus and chalk. Dom Pérignon releases each vintage at up to three plenitudes (P1, P2, P3), each marking a different window of maturity for the same wine.
