Aged a quarter century in the Highlands, the Dalmore 25 Year is a single malt Scotch built on the distillery's signature layered maturation. The spirit rests first in American white oak, moves through Palomino Fino sherry butts and first-fill bourbon casks, marries back in bourbon barrels, then takes a final turn in Tawny Port pipes. That itinerary shows in the glass as thick orange marmalade, dark chocolate, roasted coffee, and the florid sweetness the distillery is known for. At 42% ABV it drinks soft and unhurried, coating rather than biting. This is an after-dinner pour: neat, no rush, ideally alongside something with a little bitterness to answer the sweetness.

How to drink The Dalmore 25 Year

Give it a wide-bowled glass and let it sit for a few minutes before the first sip — the port-pipe finish opens up with air. A short espresso alongside plays well against the marmalade and chocolate.
