Kilchoman Sanaig is a single malt Scotch whisky from Kilchoman Distillery, one of the smallest working distilleries on Islay and one of the few that still grows, malts, and distills entirely on-site. Sanaig is matured in a mix of ex-bourbon and ex-Oloroso sherry casks, which pulls it away from the distillery's peatier core range toward something richer and sweeter, though the coastal Islay peat smoke is still there underneath. Expect dried fruit, dark chocolate, and toffee from the sherry casks up front, with a slow-building smoke and salt on the finish.
