Hakutsuru Sho-Une is a Junmai Daiginjo sake from Hakutsuru, one of the largest and oldest sake breweries in Japan, based in Kobe. Junmai Daiginjo is the highest formal sake designation, made with rice milled down to 50% or less of its original size and no added distilled alcohol, which gives a cleaner, more delicate result than lower grades. The nose is fragrant with pear and melon, the palate is smooth and light with subtle sweetness, and the finish is clean and short.
