About this bottle
IWA 5 is a junmai daiginjo sake made in Toyama by Richard Geoffroy, who spent decades as chef de cave at Dom Pérignon before moving to rice. The method came with him: rather than one rice, one yeast and one brew, IWA 5 is an assemblage blended across multiple separate brews, so each release is built for layering and consistency rather than for a single expressive note. It drinks textured and gently aromatic — white flowers and pear on the nose, a palate of steamed rice, melon and a light saline edge, and a long dry finish. Serve it lightly chilled in a wine glass with sashimi or roast fish.
