The distillery cuts its peat from Hobbister Moor, and it burns floral rather than medicinal — the reason the smoke in this whisky drifts instead of dominates. Expect heather honey and orange peel up front, dried fruit and gentle winter spice beneath, and a long finish where the smoke finally steps forward.
