About this bottle
San Matias Tahona Reposado comes from Tequila San Matias, one of the older tequila houses in the Los Altos region of Jalisco, producing since the 1880s and among the brands still using the traditional tahona method for at least part of its output. The tahona is a large volcanic stone wheel that crushes cooked agave slowly, extracting juice in a way modern roller mills skip, which producers using it argue preserves more fiber-derived flavor. This reposado rests a minimum of two months in oak, layering vanilla and light caramel over the earthier, more textured agave character the tahona process produces.
How to drink San Matias Tahona Reposado
Sip it slowly, neat or on one rock, to actually taste what the tahona method adds — this isn't a shot tequila. A classic Margarita works too, but it's a bit of a waste of the tahona character if that's all you use it for.
