Casa Mexa Ancestral is an agave spirit made the slow way, using traditional methods rather than the industrial shortcuts that speed most tequila production along. Old-school production tends to leave more of the plant in the glass, and that is the appeal here: cooked agave, earth and a little green herb on the nose, then a palate of roasted agave sugars, black pepper, citrus peel and a mineral streak, closing dry and peppery. It rewards patience and a small glass. Sip it neat at room temperature in a copita, and let it sit a minute before the first taste rather than shooting it.
