Rebecca Creek Fine Texas Small Batch comes out of a San Antonio distillery, batched in small runs rather than blended continuously. Texas ageing is its own variable: wide temperature swings push spirit in and out of the wood faster than a Kentucky rickhouse would, so barrels give up colour and oak character in less time. Expect vanilla and caramel corn on the nose, a palate of brown sugar, baking spice and soft toasted oak, and a warm, straightforward finish. Drink it neat if you want to read the wood, over one big cube on a hot evening, or in an old fashioned with an orange twist.
