Divino Maguey Mezcal Maguey Espadin 750 ml

Divino Maguey Espadin is a Mexican mezcal made from espadin, the workhorse agave behind most of what leaves Oaxaca and the variety that shows the category's traditional production most clearly. The plants are roasted in an earth pit lined with wood and hot rock, which is where the smoke comes from, then fermented and distilled in small batches. Roasted agave, wood smoke and green pepper on the nose; cooked agave sweetness with citrus, earth and a light salinity across the palate; a dry, smoky, mineral finish. Sip it slowly at room temperature from a copita, with orange and sal de gusano on the side if you have them.
