Divino Maguey Espadin Joven is unaged mezcal, bottled straight off the still rather than rested in wood, which is how most traditional mezcal is meant to be drunk. Joven means young, and the point is transparency: nothing between you and the agave except the earth pit it was roasted in. Espadin gives the sweetest, most approachable expression of the plant. The nose is fresh roasted agave, smoke and lime zest; the palate turns sweet with cooked agave, green herbs and white pepper; the finish is clean and lightly sweet under the smoke. Drink it neat and unchilled, or stir it into a mezcal paloma with grapefruit and salt.
