La Higuera Sotol Dasylirion wheeleri is distilled from wild-harvested wheeleri, the high-country sotol species, and bottled on its own without blending across plants or regions. Wheeleri tends to be the softest and most floral of the sotols, which makes this a sensible entry point for anyone who finds mezcal too smoky. The nose brings green herbs, cucumber and a little pine resin; the palate is gently sweet and vegetal with white pepper, citrus peel and a mineral core running underneath; and the finish is dry and clean rather than heavy. Serve it neat at room temperature in a small glass, and skip the ice — cold mutes it.
