About this bottle
George Dickel Rye is a Tennessee rye whisky with a 95% rye mash bill and one unusual finishing step. Before bottling, Dickel chills the whisky and filters it through charcoal, the mellowing process that rounds the sharp edges off a high-rye spirit. It lands at 90 proof: peppery rye and baking spice up front, subtle fruit underneath, and a finish smoother than the mash suggests. The remaining five percent of the grain is malted barley. Charcoal mellowing is the whole argument here, rye bite without the burn. Pour it neat to taste what the filtering does, or build it into a Manhattan or whiskey sour, where a 95% rye holds its own against sweeter ingredients.
