Armand de Brignac Blanc de Noirs, the black bottle in the Ace of Spades range, is a Champagne made entirely from black grapes and produced by the Cattier family at Chigny-les-Roses in the Montagne de Reims. Blanc de noirs means the juice comes off the skins immediately, so the wine stays pale while keeping the weight and breadth that Pinot brings to a blend. The nose leans toward red apple, brioche and dried apricot; the palate is broad and creamy with stone fruit, toasted nuts and a fine, persistent bead; the finish is long and dry. Serve it cold but not frozen, in a white wine glass rather than a flute.
