This Art of The Spirit bottling is a seven year old straight rye, double oaked and released at cask strength as a bar pick. Double oaking moves the whiskey into a second charred barrel after its initial maturation, which deepens the wood before the spirit ever reaches a bottle, and cask strength means nothing was added back afterward. Rye brings the pepper: dill, mint and dark caramel on the nose, a palate of black pepper, clove and toffee thickened by that second barrel, and a long finish that runs hot. Pour a short measure neat, add water in drops, and it makes a serious Sazerac.
