Three Sheets Spiced Rum comes from Ballast Point's distilling arm in San Diego, where the crew that built a brewery reputation on hops turned the equipment toward cane spirit. Spice-forward rums live or die on restraint, and this one keeps the vanilla in check instead of drowning the base. The nose gives cinnamon, clove and a little orange peel, the palate is warm with vanilla, brown sugar and baking spice over a light-bodied rum, and the finish stays dry enough to come back to. It is a mixing bottle first. Build it tall with ginger beer and lime, or use it in a spiced daiquiri.
