Bingham's Black is a Texas straight bourbon carrying a five year age statement. Texas maturation is its own animal: hot days, cool nights and big swings in barrel pressure push spirit in and out of the wood far faster than a Kentucky rickhouse would, so five years in Texas reads darker and more tannic than the same number of years further north. That shows here as dark caramel, dried fruit and charred oak on the nose, then brown sugar, leather and dark cherry across the palate with a dry spice edge. The finish is long, oaky and warm. Serve it neat or on one big cube where the wood has room to stretch out.
