Big Catch is a bourbon from Locke and Co Distilling, a small American producer working in modest batch sizes. Every bourbon has to be aged in new charred oak, and at this scale the barrel does most of the shaping, which is where the vanilla, caramel and gentle spice come from. Vanilla, honey and toasted corn lead the nose; the palate is sweet and soft with caramel, orchard fruit and light oak spice; the finish is warm and easy rather than long and tannic. That approachability makes it a good everyday pour: neat, over one large cube, or in a highball with soda and a lemon twist when the weather is warm.
