Bushwood Stillwater Perennial Cask 9YR 750ml

Stillwater Perennial Cask is a nine year old bourbon from Bushwood Spirits, bottled with an age statement at a time when most shelves quietly dropped theirs. Nine years is a sweet spot for American whiskey: enough barrel time to pull colour, tannin and dark sugar out of the wood, not so much that the oak flattens the grain underneath it. Expect caramel, vanilla and dried cherry on the nose, a palate of brown sugar, cinnamon and toasted oak, and a dry finish with tobacco and pepper on the tail. Neat in a glencairn shows the age; one large cube makes it an easy evening pour.
