Claridad Bicuishe Capón is a mezcal made entirely from Agave karwinskii, known locally as bicuishe, harvested at eight years of maturity in Bramaderos, Miahuatlán, in Oaxaca. Master distiller Onofre Ortíz Ortíz cooks the piñas in an oak-fired stone oven for three days, ferments them in cypress wood tanks, and double-distills the spirit in copper pot stills, bottling at 48% ABV. The result is a mezcal with a distinctly herbal, mineral edge — bicuishe tends to run leaner and more vegetal than espadín, with notes of green agave, wet stone, and a smoky finish that lingers. A bottle for mezcal drinkers looking past the more common espadín styles toward Oaxaca's wild-agave traditions.
