Eola Hills Classic Willamette is an Oregon wine from Eola Hills Wine Cellars in Rickreall, drawn from the Willamette Valley, the cool-climate stretch that made Oregon's name with Pinot Noir. The Classic bottling is the everyday tier of the range: fruit-forward, lightly handled and built to open tonight rather than to sit in a cellar for a decade. Expect red cherry and raspberry on the nose with a little forest floor behind them, a light-to-medium body with soft tannins, bright acidity and notes of cranberry and baking spice, and a clean, savoury finish. Serve it slightly cool with salmon, roast chicken or a mushroom pasta.
