Glenglassaugh Evolution is a non-age-statement single malt Scotch from the Highland coastal distillery, matured in a mix of first-fill bourbon barrels alongside Pedro Ximénez and Oloroso sherry casks. Glenglassaugh sits on the Moray Firth coast and only resumed production in 2008 after nearly two decades mothballed, making Evolution part of the distillery's early post-revival releases. Without an age statement, the whisky leans on cask diversity rather than years for its character: honey and toffee on the nose, vanilla and dried fruit through the palate, with a sweet, moderately long finish. An accessible, fruit-forward malt from a distillery still building its modern reputation.
