Holystone Distilling's Apparition is an absinthe built the traditional way, on grand wormwood, green anise and fennel — the trio that defines the category and supplies both the aroma and the louche. Add cold water slowly and the clear spirit blooms milky white as the essential oils drop out of solution, which is the show absinthe has always been about. The nose is anise, fennel and green herbs; the palate sweet anise, licorice root and wormwood bitterness with a herbal, drying middle; the finish long, cooling and faintly bitter. Serve it the proper way: three to five parts iced water dripped over a sugar cube, never neat.
