Tsunami is Holystone Distilling's shochu, the Japanese distilled spirit that sits at a lower strength than most Western bottles and is built to drink alongside food rather than after it. Shochu is made from a base such as barley, rice or sweet potato and fermented with koji, the same mould behind sake, which is where the category gets its soft, savoury edge. Expect a gentle nose of grain and steamed rice, a clean palate with mild sweetness and an umami thread running through it, and a short, dry finish. Drink it the traditional ways: chilled over ice, cut with cold water, or with hot water in winter.
